Apple, Pear or Peach Frangipane Crust


 

Ingredients 

Dry:

  • 4 cup  flour
  • 8 teaspoon sugar
  • 2 teaspoon salt
  • 4 sticks + 4 tablespoon frozen butter, cut into small peices 

Wet:

  • 4 egg yolks
  • 1⁄2 cup milk

Instructions

  1. combine dry ingredients in stand mixer; add frozen butter and mix until crumbly;
  2. combine wet ingredients in a separate bowl; add to stand mixer and mix just until dough comes together;
  3. divide into 4 equal portions (we weigh entire dough ball on scale and divide by 4), press into disks; wrap with plastic and store in refrigerator until ready to roll.
